Instructions
A healthy take on the classic Filipino sisig.
Directions
- In a medium saucepan or sizzling plate, fry the tofu until the skin crisps and turns golden brown. Transfer tofu to a separate plate.
- Heat Extra Virgin Olive Oil in a medium saucepan. Saute garlic and onions until aromatic.
- Add sliced Blue Oyster Mushrooms to the pan and cook until softened (or crispy, depending on your preference). Stir occasionally to ensure even cooking.
- In a small bowl, mix soy sauce, vegan mayonnaise, and lime juice. Pour the mixture into the pan and stir to coat all ingredients. Let the mushrooms absorb the sauce for about 2-3 minutes.
- Add chili peppers (optional) and stir to incorporate.
- Add the fried tofu back and stir.
- Turn off the heat and serve with green onions on top and lime wedges on the side.
