Directions:
For the Parmesan Crust
- In a food processor, combine the all-purpose flour, grated Parmesan cheese, and salt. Pulse a few times to mix the ingredients.
- Add the cold diced butter to the food processor and pulse until the mixture resembles coarse crumbs.
- Gradually add the ice-cold water, one tablespoon at a time, while pulsing the food processor, until the dough starts to come together. Be careful not to overmix.
- Turn the dough out onto a lightly floured surface and gently knead it a few times to form a smooth ball. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
For the Tart Filling
- Preheat your oven to 375°F (190°C). Grease a 9-inch tart pan with a removable bottom and set it aside.
- In a small bowl, mix together the minced garlic and extra-virgin olive oil. Let it sit for a few minutes to infuse the oil with the garlic flavor.
- Roll out the chilled Parmesan crust dough on a floured surface to fit the tart pan. Carefully transfer the dough to the prepared tart pan and press it into the bottom and sides.
- In the tart crust, evenly spread half of the shredded mozzarella cheese.
- Arrange the thinly sliced heirloom tomatoes on top of the mozzarella layer, slightly overlapping each other.
- Drizzle the garlic-infused olive oil over the tomato slices, ensuring they are all coated.
- Sprinkle the remaining shredded mozzarella cheese and grated Parmesan cheese on top of the tomatoes.
- Season the tart with salt and black pepper to taste. Sprinkle the fresh basil and thyme leaves over the tart.
Baking the Heirloom Tomato Tart
- Place the tart pan on a baking sheet to catch any potential drips. Bake the tart in the preheated oven for 30-35 minutes or until the crust is golden and the tomatoes are tender.
- Once baked, remove the tart from the oven and let it cool in the pan for a few minutes.
- Gently remove the outer ring of the tart pan, and transfer the tart to a serving platter.
