Ingredients

  • Crookneck Squash
  • Plain Flour
  • Corn Flour
  • Baking Powder
  • Sea Salt
  • Ice Cold Sparkling Water
  • Sesame Seeds
  • Spring Onions
  • Extra Virgin Olive Oil

Instructions

Directions:

  1. Peel and cut the Crookneck Squash into wedges.
  2. In a large bowl, whisk together the plain flour, corn flour,baking powder, sea salt and sparkling water. 
  3. Heat oil in a large saucepan over medium heat.
  4. Dip the squash wedges into the batter and fry until golden brown and crispy.
  5. Spread the squash beignets into a serving plate and sprinkle with sesame seeds and spring onions.
