- 2 tbsp Stevia finely chopped
- Salt and pepper, to taste

- 1 tbsp chives, finely chopped
- 1 tbsp cilantro, finely chopped
- 1 tbsp lemongrass, finely chopped
- 2 tbsp fresh navel orange juice
- 1 tbsp lemon verbena, finely chopped
- 2 tbsp olive oil
- Salt, to taste
Additional:
- 2 ripe avocados, sliced
INSTRUCTIONS
Preparing the Butternut Squash: Preheat the oven to 400°F (205°C). In a mixing bowl, combine the butternut squash cubes, olive oil, stevia, salt, and pepper. Toss to ensure all pieces are coated evenly. Spread the mixture on a baking sheet and roast for 20-25 minutes, or until the squash is tender and slightly caramelized. Remove and set aside to cool slightly.
Preparing the Herb Drizzle: In a bowl, whisk together chives, cilantro, lemongrass, lemon verbena, navel orange juice, and olive oil. Season with salt. Ensure it's well combined.
Assembly:
In a serving dish, layer the stevia-glazed butternut squash. Intersperse with avocado slices, ensuring a good mix of both. Drizzle the herb mixture over the top, ensuring the squash and avocado are generously coated. Garnish with chopped herbs.
